Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup sour cream
4 eggs, beaten
3 cups shredded cheddar cheese
dash of salt & black pepper to taste
8 scallions, chopped
2 ripe med. tomatoes, chopped then drained
2 ripe avocado, sliced about 1/4 inch thick
2 deep pie shells



Instructions:
Preheat oven to 375°.
Combine sour cream, eggs, salt and pepper. Mix well. Add cheese, mix well. Stir in scallions and tomatoes.

Lay avocado slices on the bottom of pie shells. There should be just enough slices to cover the bottom. Pour cheese mixture over avocado slices and spread out evenly.

Bake 40-45 minutes, until set and golden and puffy. Let stand 10 minutes before serving.

Top with a spoonful of sour cream and fresh chopped avocado, scallion and tomatoes.


Notes:
This is by far Evinšs favorite dish. Try replacing the fresh tomato with picante, well drained! Yummy! Makes 2 quiches Serves 6-8 slices per quiche.
