Cinnamon Mornings and Chocolate Dreams

Yield: 3 servings 

Ingredients:
4 eggs
2/3 cup milk
1/4 teaspoon baking powder
1 tablespoon vanilla
3 bagels, sliced, then quartered (poppy seed and sesame seed work best)

Instructions:
Mix together eggs, milk, baking powder and vanilla. Pour into a shallow pan. Place bagel pieces into shallow pan with the dough or interior side down, crust side up. Cover and refrigerate overnight.

Remove bagel pieces from mixture. Discard mixture. Place the pieces of dough interior side up on a cookie sheet or in an 8 or 9 inch greased shallow cake pan. Group 5 pieces together to form one serving. Sprinkle with cinnamon sugar.

Bake at 375º F for 20 to 25 minutes or until brown and firm. It can be baked and held under foil for up to an hour. Reheat in microwave and add the topping.

Serve with butter and syrup or topped with warm apple pie filling seasoned with additional nutmeg and cinnamon to taste.
