Ingredients: 2 1/4 cups all-purpose Organic flour, divided 1/2 cup Organic powdered sugar 1 cup Organic butter, softened 4 large Organic eggs 2 cups Organic raw granulated sugar 1/3 cup Organic lime juice 1/2 teaspoon baking powder Organic powdered sugar Lime peel Instructions: Preheat oven to 350° In a large bowl, whisk together 2 cups Organic flour and 1/2 cup Organic powdered sugar. With a fork or pastry blender, cut softened Organic butter into the dry ingredients until mixture is crumbly. Press mixture into lightly greased 13- x 9-inch pan. Bake until lightly browned, 20-25 minutes. Remove crust from oven and set aside. In the same large bowl, whisk Organic eggs. Into egg mixture whisk in Organic raw granulated sugar and Organic lime juice. Combine remaining 1/4 cup Organic flour and baking powder; whisk into egg mixture. Pour batter over crust. Bake until set, 25-30 minutes. Let cool on wire rack. Cut into squares, and sprinkle evenly with additional powdered sugar and lime peel. Notes: Store in refrigerator; serve chilled on a warm summer day with iced tea or lemonade ... on the porch, if possible! |
