Cinnamon Mornings and Chocolate Dreams

Yield: 5 dozen 

Ingredients:
1 cup shortening
1 cup sugar
1 cup brown sugar, packed
2 eggs
1 tsp vanilla
2 cups all-purpose flour
2 cups old-fashioned oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups flaked coconut
1 cup walnuts, chopped



Instructions:
In a large mixing bowl, cream the shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

Combine the flour, oats, baking powder, baking soda and salt; gradually add to creamed mixture and mix well. Stir in coconut and walnuts.

Drop by rounded tablespoonfuls 3-in apart onto greased baking sheets. Flatten slightly.

Bake at 350 for 11-14 minutes or until golden brown. Cool for 2 minutes before removing to wire rack.

Store in airtight container.
