Ingredients: 1 c. quick oatmeal 1 tsp. baking powder 1 c. sour milk 1/2 tsp. baking soda 1 c. flour 1/2 tsp. salt 3/4 c. brown sugar 1 egg, beaten 1/4 c. melted butter 1 c. fresh or frozen blueberries* *Fresh picked Canadian blueberries are the best--yummy! Instructions: In a bowl combine oats & milk; let stand a few minutes. Stir egg and melted butter into oat mixture. Add dry ingredients, mixing just until moist. Fold in blueberries. Fill 12 greased muffin tins 3/4 full. Bake at 400 for 15-20 minutes or until golden brown. |
