Ingredients: 2 fresh California Bartlett pears 1 tsp fresh lemon juice 1/2 cup light brown sugar 1/2 cup all-purpose flour 1/4 tsp ground nutmeg 2 Tbsp margarine or butter 1 pkg (13-ounce) blackberry muffin mix Instructions: Pare and core pears, slice lengthwise into 1/4 inch thick slices. Sprinkle with lemon juice; set aside. Combine brown sugar, flour and nutmeg in small bowl. Cut in margarine or butter until crumbly. Set aside. Prepare muffin mix according to package directions. Spread batter in lightly greased 9x9x2-inch glass pan. Arrange pear slices in rows on top of batter. Sprinkle with crumb mixture. Bake at 350 degrees F for 40 to 45 minutes until lightly browned, fruit is tender and toothpick inserted in center comes out clean. Cool slightly and cut into squares. |
