Ingredients:
Poached Pears

1qt of Water
3 cups of White Wine
4 Lemons
4 cups of Sugar
6 Bartlett Green Pears
6 Thyme Sprigs


Champagne Vinaigrette

1 cup champagne vinaigrette
2 cups olive oil
3 thyme Sprigs(chopped)
3 teaspoons of honey
Salt & Pepper to taste


Candied Walnuts

2 egg whites
1 cup of sugar
1 pound of walnuts


Instructions:
Simmer water, wine, sugar, lemon & thyme on low heat about 1 hour
Peel Pears & place in poaching liquid with a towel covering them.
Simmer about 15 min, cool in ice broth
When cool, cut the pears & cover with poaching liquid


For Champaigne vinaigrette:
In a bowl place honey & slowly drizzle in oil with whisk stirring until incorporate.
Next same with the Vinaigrette, add Thyme & Season to taste.

For Candied Walnuts
Toss Egg Whites & Sugar & Walnuts & place on sheet
Pan & Roast in Oven about 10 minutes


Notes:
Toss Greens with the Vinaigrette, Salt & Pepper & Candied Walnuts
Arrange Pears & Garnish with Shaved Goat Cheese.
