Ingredients: 1/3 cup lime juice 1/3 cup water 1/3 cup sugar whole pineapple, cut into cubes blueberries 1/4 cup crystallized ginger, finely chopped Granny Smith apples Instructions: Bring sugar, water, and lime juice to a boil in a small saucepan. Stir until sugar is dissolved. Remove from heat and cool to room temperature. Toss fruit in lime sauce and sprinkle with chopped ginger. Notes: The yield for this recipe depends on you. The chef can be creative and add mangoes instead of apples, if they are available and desirable. I generally use about 3 cups of blueberries, and add other fruits to make the mixture seem balanced.
