Ingredients:
1 Box Phyllo Dough
2# Wild Mushrooms (roughly chopped)
2ea. Shallots (minced)
2T. Garlic (minced)
.5C.Parmesian or Romano Cheese

.5C. Melted Butter
TT salt and pepper


Instructions:
Sweat the garlic and shallots in Extra Virgin Olive Oil, add the mushrooms and caramelize . Cook out the liquid. Add the cheese and let chill slightly.

Brush 1 sheet of phyllo with butter, Place another sheet phyllo on top and brush with butter. Repeat until you have 6 layers total.

Add the cooled mushrooms to the center in the form of a log, roll the strudel, similar to a Burrito. Place on a cookie sheet, Brush the top with butter and bake at 350 until golden brown.


Notes:
Serve on a bed of greens with a citrus reduction or an Aged Balsamic Vinegar.
