Ingredients: 1 Quart Heavy Cream ½ lb Semi sweet chocolate 2 oz Sugar ½ c pasteurized egg yolks Instructions: Combine cream, chocolate and sugar in a saucepan. Heat to scald, stirring frequently. Slowly pour cream mixture into yolks, whisking until blended. Pour back into saucepan. Bring to 180 degrees, hold for 3 minutes, do not let it boil. Strain mixture. Pour into ramekins. Let set in refrigerator until cool Notes: Makes approximately 10 ramekins |
