Ingredients: 2 each Chicken Breasts 2tsp Dijon Mustard 2 tsp Chopped Pistachios To Taste Salt & Pepper Instructions: Sear Chicken in a hot pan until golden brown. Brush skin side with Mustard to lightly coat, sprinkle with salt, pepper and pistachios. Place in a 350 degree oven for approximately 10 to 15 minutes. Polenta- Prepare Ahead 2c Water 1/2c Blue Corn Meal (if not available use white or yellow) 1/4c Goat Cheese To Taste Salt & Pepper Bring water to a boil, add corn meal slowly, simmer for approximately 5 minutes, add goat cheese and salt & pepper. Pour out on a cookie sheet. Spread to a 1 inch thickness and chill. When cool, cut into desired shape. Preheat by placing in oven for about 10 minutes. Charred Onion Simply peel onion, cut in half, rub with olive oil, salt & pepper and grill. To prevent burning, after the grill marks are on the onion, place in oven until knife tender. |
