Ingredients:
4 Spanish Onions (med diced)
10 Cloves of garlic
3 Peeled butternut squash (med diced)
1 Head celery (med diced)
3 Peeled carrots
1oz. Fresh thyme
3oz. Olive Oil
2Oz. Curry powder
1 ˝ Gallon Chicken Stock
1 Qt. White Wine
1 Qt. Heavy Cream

Salt & pepper to taste



Instructions:
Sweat all ingredients in large sauce pan on medium heat until tender and add salt and pepper to taste. Remove all ingredients and mix in blender. Deglaze the pan in which you sweated all the ingredients with white wine and reduce until half. Add ingredients from blender and add chicken stock and reduce by fourth. Add heavy cream and simmer for 20 minutes.

Salt and Pepper to taste. Bonne Apetite
