Ingredients:
8 oz Lamb Rack

Sweet Jewel Potato

1 Pound of Jewel Potato
1 Tablespoon of Parsley
½ Tablespoon of Fresh Thyme
3 Tablespoons of Olive Oil
Salt and Pepper


Instructions:
8 oz Lamb Rack seared with course Mustard and Parsley. Put in a preheated oven set at 400º for 12 – 15 minutes, allow to rest.

Sweet Jewel Potato

Add all ingredients in bowl, season with Salt and Pepper
Pre-heat ½ sheet pan in oven set at 400 ºfor 20 minutes
Roast the Potatoes for 20-25 minutes or until just tender

Substitute Veal Demi for Beef Broth. Reduce & Thicken For Sauce

Garnish

Set Lamb Chops on plate with Sautéed Spring Ramps, substitute with Spinach or other Green Leaf Vegetable, Buttered Asparagus, Roasted Jewel Potatoes.
Cut Lamb – enjoy!
