Ingredients: Cake Ingredients: ¼ cup butter ½ cup white sugar 2 eggs 1 tsp vanilla 2/3 cup sour cream ¼ cup apple juice 1 ¾ cups all purpose flower 1 ½ tsp baking powder ½ tsp baking soda 1 ½ tsp cinnamon ¼ tsp nutmeg ½ tsp salt 1 tsp ginger (ground) ¼ cup chopped crystallized (or candied) ginger Topping Ingredients: ¼ cup butter (melted) ¾ cup brown sugar 2 cups apples (peeled, cored and finely chopped) Instructions: Cake Preparation: Cream together butter, sugar and vanilla, then add eggs, one at a time. In a separate bowl, combine sour cream and apple juice. Combine butter and egg mixture with juice mixture. In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger and salt. Then add chopped ginger. Mix together dry ingredients with wet ingredients and pour into a greased tube pan. Bake at 325 degrees for 35 to 40 minutes. Topping Preparation: Melt butter in a large frying pan, then add brown sugar. When combined, add apples and sauté until apples are tender. Serve warm with wedges of cake and lightly sweetened whipped cream. |
