Ingredients: Fresh Spinach, amount depends on number being prepared, white cheese (mozzarella, swiss, etc.) sour cream or tomato sauce and eggs. Instructions: Wash spinach and steam until limp. Spray individual baking dishes with PAM. Spread sour cream on bottom of dish, drop 1-2 eggs in dish. Surround eggs with steamed spinach and sprinkle cheese on top. Bake at 425 degrees for 8-10 minutes or until whites are set. For a hard egg, poke yoke prior to baking. Put dishes for soft egg on middle rack, medium egg on lower rack. Both will take about the same amount of time. Serve plate on top of another plate with small napkin between the two, this keeps the plate from slipping. Variations: Mix pesto with sour cream or Classico tomato sauce (basil, pesto, or with muchrooms) spread on the bottom. About 2 TBS. per dish or more if desired. |
