Ingredients: 3 cups dried garbanzo beans (or two 19-ounce cans) 2 large tomatoes, chopped 1 green pepper, chopped 1 red pepper, chopped 4 scallions, trimmed and chopped 1/2 cup chopped parsley 1 Tablespoon oregano (use fresh if possible) 1/2 cup olive oil 3 Tablespoons balsamic vinegar Salt and pepper to taste Instructions: Cook fresh garbanzo beans (if canned, rinse beans well). Put in large bowl with tomatoes, peppers, scallions, parsley, and oregano. Dress with olive oil and balsamic vinegar. Add salt and pepper to taste. Notes: Very nice with Leg of Lamb or Lamb Shanks. |
