Yield: 6 servings 

Ingredients:


Instructions:
1 cup roasted and chopped gen chilie
3 cups clairified unsalted butter
3 tablesppons fresh lemon juice
6 shakes of Tabasco sauce
1 teaspoon dijon mustard
7 teaspoon Kosher salt
4 large eggs yolks
Place ingredients in mixing bowls and whisk together over double boiler until frothy and thickened. Remove from heat and lowly drizzle in clarified butter until thick.

1 cup roasted and chopped green chili
1/2 teaspoon cumin powder
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder

Simmer and cool. Stir into hollandaise at end.
