Cinnamon Mornings and Chocolate Dreams

Ingredients:
5 cups of fresh papaya and guava
5 T fresh lilikoi or lemon juice
1/3 cup plus 2/3 cup sugar
1 cup plus 3T unbleached flour
1t baking powder
½ t salt
½ t cinnamon
½ t nutmeg
1 large egg, lightly beaten
3T melted butter



Instructions:
Combine papaya, guava, and likikoi juice with 1/3 cup sugar and 3 T flour in an 8-inch square baking dish.
In medium bowl combine 1 cup flour, 2/3 cup sugar, cinnamon, nutmeg, baking powder, and salt; mix well with fork. Make a well in the center, add egg, and stir until flour is moistened. Blend with your fingers.
Sprinkle flour mixture evenly over fruit. Drizzle melted butter over top. Bake at 350 degrees until it is lightly browned, about 40 minutes.

Transfer to wire rack and cool slightly. Serve warm or at room temperature.

Notes:
Other fruit can be substituted. Moister fruit will need more flour mixed with it.
