Ingredients: 1 tsp. butter or margarine to grease pie plate 5-6 stalks asparagus, cleaned & cut into 1" pieces 1 shallot, finely minced 1 tsp. butter 8 eggs 1/2 c. milk 1 tsp. fresh dill, finely chopped 2 Tbsp. fresh parsley, finely chopped 1 Tbsp. fresh chives, finely chopped Salt & pepper to taste. Preheat oven to 350 degrees. Position rack in center of oven; lightly grease 9" pie plate with butter. Steam asparague 2-3 minutes, untile tender and bright green. Spread in greased pie plate. Saute shallot in butter until translucent. Sprinkly evenly over asparagus. In medium bowl, mix eggs well with milk. Add herbs, salt & pepper. Pour over asparagus and shallots. Bake 25 minutes, until set. Serve with good summer tomatoes or stewed tomatoes. Instructions: |
