Ingredients: 15 slices white bread, cubed 8 oz cream cheese 1 cup fresh or frozen blueberries 8 eggs 2 cups milk 1/3 cup maple syrup Cinnamon to taste Instructions: Place 2/3 bread cubes in greased 13 x 9 baking dish. Cut cream cheese in small cubes and dot over bread. Top with blueberries and remaining bread. In large bowl beat remaining ingredients and pour over bread. Cover and refrigerate overnight. Cover and bake at 350 for 30 minutes; uncover and bake additional 30 minutes or more, until golden brown and center is set. Remove from oven and let set 5-10 minutes before serving. Makes 12. Sauce: 1 cup sugar 2 Tbsp cornstarch 1 cup water 1 cup blueberries 1 Tbsp butter or margarine In small saucepan, mix sugar and cornstarch. Add water, and bring to boil for 3 minutes, stirring occasionally. Stir in blueberries, reduce heat and simmer 8-10 minutes. Stir in butter until melted. Serve over Strata. Makes 1 3/4 cup sauce. * Try strawberries, raspberries, or blackberries too. Sauce is great over pancakes and French toast. |
