Cinnamon Mornings and Chocolate Dreams

Cook Time: 15 minPrep Time: 20 min
Yield: 12 servings 

Ingredients:
Basic Muffin Mix
12 cups all purpose flour
4 ½ cups sugar
4 T Baking Powder
1 T Baking Soda
2 t. salt
Streusel Topping
2 cups flour
2 cups chopped pecans
2 cups brown sugar
2 cups old fashioned oats
2 t. cinnamon
1 cup melted butter


Instructions:
Sift Basic Mix ingredients and mix very well to combine. This will store for several weeks in a tight container. Fluff up before measuring when you use it.

For the Streusel Topping:
Mix dry and then add the melted butter and mix with a fork until crumbly.

Notes:
Here are my two favorites:

Blueberry Muffins
½ cup melted butter
1 cup milk
2 eggs, slightly beaten

Mix together and then add:
1 cup oatmeal, I prefer old fashioned oats
2 cups of the Basic Mix

Top with streusel topping or ½ teaspoon of suga
