Cinnamon Mornings and Chocolate Dreams

Ingredients: Loaf of apple spice bread or hearty bread of choice 4-6 eggs 3/4 cup of milk-I use 2% 1-teaspoon vanilla or almond extract 1 teaspoon cinnamon 1- 8 oz. pkg light cream cheese 1/4 cup brown sugar 8 ounces of sliced almonds Powdered sugar for dusting Maple syrup Instructions: In a small bowl, mix together cream cheese and brown sugar until blended. In a 9X13 baking dish, whisk together eggs, milk, vanilla and cinnamon. Put sliced almonds in a separate shallow dish, next to egg mixture. Allowing 2 slices of bread per person, spread one slice with cream cheese. Top with other slice of bread. Dip in the egg mixture making sure that both sides absorb the mix. Remove from egg mix and coat each side of bread with sliced almonds. Repeat with additional slices until you have enough for each person. Preheat a large griddle or skillet over medium heat. Add about a tablespoon of butter, making sure to coat the surface. Add as many slices as will fit on griddle/skillet and cook for about 3 to 4 minutes per side. Remove from heat and keep warm. When ready to serve, cut the french toast in half, add a pat of butter and dust with powdered sugar. Serve with a small pitcher of warm maple syrup. Garnish with a strawberry and/or sliced apples.
