Ingredients: 1 medium spaghetti squash, cooked 4-5 Tbsp grated fresh ginger 4 eggs 2 Tbsp chopped green onion or chives Instructions: Cook the squash the night before. In the morning scrape out the spaghetti squash into bowl. Add ginger, eggs, and onion or chives. Form into 3 inch patties in skillet at 375 degrees. Cook 3-4 minutes on each side. Serve with soy sauce or Tamari. Makes 30 pancakes. Great with a little sweet rice for a Hawaiian flair! |
