Ingredients: 2 Red Beans, canned and rinsed 2C Cous Cous, steamed 1 V-8 juice, can 2C bell pepper, celery, onion 1C tomato, fine dice 2C tasso ham, diced 1T garlic 1t Creole Seasoning 2 oz. White Wine 2t Oregano 2t Thyme 3T Cilantro Instructions: Saute peppers, onions and celery with tasso ham. Add thyme, oregano and creole seasoning with garlic. Cook 2-3 minutes, deglaze with wine. When cooled add to cous cous with diced tomatoes and cilantro. Add olive oil to coat, about 2 ounces. |
