Ingredients: 2 eggs 1/4 cup sugar 1/2 cup vegetable oil 1/4 cup honey 2 cups mango, slightly mashed 2 cups flour 2 teaspoons baking soda 2 teaspoons cinnamon 1/2 teaspoon salt 1/2 cup walnuts, chopped 1/2 cup raisins Instructions: Beat eggs until fluffy. Beat in sugar, oil and gradually add honey. Blend in mango. Combine dry ingredients and add very gradually to the mixture. Stir in vanilla, walnuts and raisins. Pour into 2 greased and floured bread pans. Let stand for 20 minutes. Bake at 350 degrees for 50-60 minutes. |
