Ingredients:
1 1/2 cups of sifted flour, 2 Tsp. sugar, 1 Tsp. baking powder, 1/4 tsp. sea salt. 2 eggs separated, 1 1/2 tsp. vanilla, 1 1/2 cups of milk, 1/2 cup of vegetable oil.

Instructions:
Sift dry ingredients. Mix eggs yolks, milk, oil and vanilla. Beat egg whites to soft peaks. Blend together the dry and wet ingredients and then fold in the egg whites. In a small fry pan mix a 1/2 cup of pecans halfs and 1 cup of maple syrup. Heat and reduce by 1/4, then add sliced firm bananas and grate nutmeg over the bananas . Remove from heat. Pour the syrup mixture over the cooked waffles and serve.
