Ingredients: 1/2 stick of sweet butter 1/3 cups of sugar 1/3 cup of honey 2 eggs 3 mashed bananas 3/4 cup of oatmeal 3/4 cup of flour 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/3 cup of chopped walnuts Instructions: Pre-heat oven to 375. Grease a muffin tin for 12. Mix softened butter with sugar in a larger bowl. Using a mixer, add one egg at time and beat until blended. Add the bananas and mix gently. Stir in all the dry ingredients and mix until blended. Add walnuts to mixture. Then evenly distribute into muffin tin. Bake for 20-25 minutes or until a toothpick comes out clean. Rotate muffin tin half way through for best results. Let muffins cool for 10 minutes then lift out of muffin tin and rest on side in the muffin tin. Serve warm or when cool freeze for use later on. |
