Yield: 6 servings

Ingredients:
3/4 cup quick cooking oatmeal
1 cup skim milk
1/3 cup "lite" or "free" cream cheese
1/4 cup light brown sugar or Sucanat (in health food stores)
1/4 cup maple syrup
1/4 tsp nutmeg
1/2 tsp ginger
1 tsp grated orange peel
1/2 cup choped or slivered almonds
1 cup sliced peaches
3 egg whites, stiffly beaten

Instructions:
Soak the oats in the milk overnight. Oil a 1 1/2 quart souffle dish. Heat oven to 325 degrees. Heat oatmeal for 4 minutes in microwave. Add cream cheese and stir until melted. Add sweeteners and spices, then fold in nuts, peaches, and egg whites. Bake for 40 minutes at 325 degrees. Serve immediately, although will not collapse as fast as most souffles.

Variations: Try different fruits, such as blueberries, apples, blackberries, or raspberries. Try other nuts suchas hazelnuts or walnuts.
