Cinnamon Mornings and Chocolate Dreams

Cook Time: 55 minPrep Time: 10 min
Yield: 6 servings 

Ingredients:
4oz. of crumbled feta cheese
1 10 oz. package of chopped spinach (thawed and squeezed dry)
5 eggs well beaten
1 pint light cream
1 tsp. salt, pepper to taste
1 tbl. grated romano or parmesan cheese
one pieshell

Instructions:
Thaw spinach, squeeze dry. Beat eggs, add light cream, salt and pepper, and beat some more. Layer spinach, then feta in a pie shell (I use a frozen shell). Pour liquid mix over contents and sprinkle grated cheese on top . Bake at 350 degrees for approximately 55 minutes till the quiche puffs and lightly browns.

Notes:
Put quiche on cookie sheet lined with foil for easy cleanup.
