Cinnamon Mornings and Chocolate Dreams

Cook Time: 30 minPrep Time: 15 min
Yield: 12 servings 

Ingredients:
3 cups unbleached all purpose flour
1 tbl baking soda, 1 tsp natural orange oil
1/2 tsp salt, 1/2 tsp baking soda
10 tbl unsalted butter, softened
1 cup packed light brown (or dark) sugar
2 large or jumbo eggs,
1 1/2 cups plain whole milk yogurt
1/2 cup chopped walnuts, 1/2 cup craisins

Instructions:
Heat oven to 375 degrees.Butter muffin tin. Mix flour, baking soda,& salt in medium bowl and set aside.Beat butter, and brown sugar w/ electric mixer on medium speed till light and fluffy(2 mins.)Add eggs one at a time beat well after each. Mix in orange oil.By hand, beat in 1/2 of dry ingredients, 1/3 of yogurt, and beat in remaining dry ingred. in two batches alternating w/ yogurt. Only beat until incorporated.Fold craisns and nuts in. Divide batter evenly, bake until golden brown 25-30 minutes. Cool on wire rack, turn out and serve.

Notes:
Use rack in lower middle position. Dip the muffins in melted butter and sugar/cinnamon or a sparkling sugar to dress them up. King Arthurs Flour stocks the great orange oil.
