Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
1 Medium White Potato
1 Medium Turnip or Rutabaga
1 Medium Sweet Carrot
1 Medium Parsnip
1 Small Onion
1 Large Egg
1 Tbls Cider Vinegar
2 Tablespoons Flour
1/2 tsp Coarse Kosher Salt
1 tsp Cracked Black Pepper
1 Cup Sour Cream
2 Tbs Poppy Seed
Honey



Instructions:
Peel and wash vegetables. Shred into a mixing
bowl. Add egg, flour, vinegar and salt & pepper.
Mix well.
Meanwhile heat oil in saute pan and preheat oven
to 375.
Make pancake patties (Squeeze out excess water)
and brown well on both sides (5-8 minutes each).
Place on oven proof pan and put in oven to hold or
serve immediately.
Mix together Sour Cream, honey and poppies seeds.
The amount of honey varies according to type -
taste and add a little at a time. The mix should
be only slightly sweet.
Remove pancakes from oven, top with sauce and
serve.

Notes:
This is a fun variation on the traditional potato
pancakes. It's a little more festive. Note: after
adding cider vinegar make the pancakes right away.
The vinegar adds flavor and adds to the crispness,
but the vinegar will "cook" the ingredients i
