Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
2-3 Barlett, Anjou or Cornice pears (about one pound)
Juice of one lime
4 extra large eggs
1/3 cup granulated sugar
2 Tablespoons melted butter
1 cup cream or plain yogurt
1 teaspoon ground ginger
Finely julienned zest of 1 lime
1/3 cup honey

Preheat oven to 350 degrees. Generously butter a 9 inch diameter glass or ceramic quiche pan. Peel and core pears and cut them into 1/2 pieces. Place the pears in a small bowl with lime juice and toss. In a med bowl wisk the eggs together with sugar, butter and cream or yogurt. Drain the pear halves and arrange them in a shallow baking pan and pour the egg mixture over the pears. Dribble honey over the top. Sprinkle the lime zest on top. Bake 25 to 30 minutes. Serve the Claufotis warm as a breakfast fruit side dish. Serves 6 to 8.
