Ingredients: Carrot Cake 2 cups flour 2 cups sugar 2 tsp baking soda 2tsp cinnamon 1 cup vegetable oil 3 eggs (slightly beaten) 2 tsp vanilla 1 1/3 cps shredded carrots 1 cup walnuts 1 cup shredded coconut 3/4 cup drained pineapple chunks Cream Cheese Frosting OZ Cream Cheese 5 Tablespoons unsalted butter 2 teaspoons pure vanilla 2 to 2 1/2 cups of powdered sugar, sifted Instructions: Carrot Cake 1. Preheat oven to 350 degrees 2. Mix all ingredients 3. Place in three 8" cake pans 4. Bake in oven for approximately 30 minutes or until toothpick comes out clean 5. Let cool for 10 minutes. Turn out of pans. Cream Cheese Frosting In a food processor pulse all ingredients just until smooth and creamy Notes: If the frosting is too stiff, pulse a few seconds longer, but do not over process. Add some pecans or walnuts and frost. |
