Yield: 1 servings 

Ingredients:
2 6oz chicken breast, flour, 1 egg (beaten), bread crumbs, 1/8 cup diced onion, 1/3 cup white wine, 2oz chicken stock, 1/3 cup heavy cream, 2 Tbs cherry concentrate, 1 Tbs dried cherries, 2 tsp sugar and a dash of white pepper.

Instructions:
Cooking the Chicken: Coat the breast in flour, then egg, finally roll through the bread crumbs, covering evenly. Saute in oil over med-high heat. Heat both sides until cooked through. Set aside.

Cooking the Sauce: Lightly saute the onion in 2 tsp oil the add wine and allow the alcohol to cook out. Strain out onion, place liquid back in pan and add stock. Bring to a boil, add cream, cherry juice, sugar, white pepper and cherries. Allow to cook until thickened.

Garnish with fresh basil chiffonade.
