Ingredients: 1 cup chopped dates or prunes 1/2 cup raisins 1 cup unsweetened applesauce 1/4 tsp. salt 2 egg whites 1 tsp. baking soda 1 cup flour 1 tsp. cinnamon Optional - chopped apples, drained pineapple tidbits and chopped nuts. Instructions: Combine ingredients until flour is moist. Bake in mini-muffins pans, that have been sprayed with Pam, at 350 degrees for 12-14 minutes. Fill tins 3/4 full. Don't overbake. Makes about 2 dozen. Freezes well. |
