Cinnamon Mornings and Chocolate Dreams

Ingredients:


Night before in a medium bowl combine:
2 cups regular rolled oats (old fashioned oats)
2 cups buttermilk

Stir the mixture to blend well, cover, and refrigerate until the next day.

Mix the dry ingredients anytime but do not add them until the oatmeal/buttermilk mixture has had a chance to soak overnight. On a large mixing bowl sift the following ingredients:

1/2 cup all purpose flour
2 Tbls sugar
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt

When you are ready to make the pancakes, add the following to the oatmeal/buttermilk mixture:
2 lightly beaten eggs
1/4 cup melted butter (cooled)

Add the dry ingredients and blend. The batter will be thick.

Instructions:
The batter for these hearty, old fashioned oatmeal pancakes is started the night before you are planning to serve them.

Pour 1/4th cup of batter for each pancake onto a lightly greased, heated (approx. 380 degrees) griddle. Spread the batter out ot make 3" to 4" circles using the back of spoon. Pancakes will rise nicely, cook each pancake until top is dry and you see bubbles- do not flatten - just flip and cook the second side until golden brown.
