Ingredients: 3 cups apple - pared, cored and sliced 5 Tablespoons plus 2 cups sugar 5 teaspoons cinnamon 3 cups flour 3 teaspoons baking powder 1 teaspoon salt 1 cup salad oil 4 to 6 eggs (depending on size) 1/4 cup orange juice 1 Tablespoon vanilla Whipped cream (optional) Instructions: Preheat oven to 375 degrees. Combine the apples, 5 Tablespoons sugar, and cinnamon and set aside. Sift the flour and combine with remaining sugar, baking powder, and salt in a bowl. Make a well in center of dry ingredients and pour in the oil, eggs, orange juice, and vanilla. Beat with a wooden spoon until well blended. Spoon 1/3 of the batter into a greased 9- or 10-inch angel food pan. Make a ring of half the apple mixture, drained of excess moisture, on top, taking care not to have apple mixture touching sides of pan. Spoon another third of batter over the apple mixture. Make a second ring with remaining apples and top with remaining batter. Bake 1-1/4 hours. Cover top with aluminum foil if it begins to over-brown. Allow to cool to lukewarm in pan before turning out onto a serving plate. Slice and serve with whipped cream if you dare. |
