Cinnamon Mornings and Chocolate Dreams

Ingredients: 5 cups flour 3 cups sugar 12 oz. raisin bran cereal 1 cup golden raisins 5 teaspoons baking soda 2 teaspoons salt ½ teaspoon allspice 1 teaspoon cinnamon 4 beaten eggs 4 cups buttermilk 1 cup oil Instructions: For best results, prepare batter the day before. Preheat oven to 400 degrees when ready to bake. Mix all dry ingredients together. Add eggs, buttermilk and oil to dry ingredients and mix well. Pour into lined muffin cups ¾ full and bake for 15 minutes or until brown. Dip tops of muffins in melted butter, then in sugar-cinnamon mixture (1 cup sugar and 1 teaspoon cinnamon). This recipe makes almost a gallon of batter and will keep, covered tightly, in the refrigerator for up to 6 weeks. Just use as needed. Makes 40 muffins. This is probably our most asked for recipe! |
