Cinnamon Mornings and Chocolate Dreams

Yield: 4 dozen 

Ingredients:
4 cups flour
2 cups sugar
4 teaspoons soda
2 teaspoons salt
4 cups All-Bran cereal
3 eggs
4 cups milk
1 ½ oil
1 (8oz.) tub honey nut cream cheese or your favorite flavor

Instructions:
(For best results, prepare the batter the day before.) Preheat oven to 425 degrees. In a large bowl, mix flour, sugar, soda, salt and bran cereal; set aside. Beat together eggs, milk and oil. Add wet ingredients to dry and mix just until blended. Spoon batter into greased muffin cups just to cover the bottom of the cup. Using a melon ball scoop place a ½ inch scoop of cream cheese in center of each muffin. Fill the cup ¾ full with batter covering the cream cheese scoop. Bake for 15 to 20 minutes. Makes 4 dozen muffins, but batter will keep in refrigerator for up to 2 weeks if you wish to make less at one time.
