Ingredients: 10 oz cooked linguini 16 shrimp, medium sized 1 shallot, slivered 4 garlic cloves, crushed and minced 2 Roma tomatoes, diced 1/4 cup lemon juice 1/4 cup white wine (Pinot Grigio works well) 1/4 stick unsalted butter 1/4 cup basil, thinly shredded 1 Tbsp parmesan cheese Instructions: Get a stainless steel frying pan smoking hot with a touch of olive oil. Sear shrimp both sides for about 3 minutes. Add shallots, garlic and tomatoes. Sautee for 2 minutes, add wine and lemon. Reduce until almost dry. Turn heat down, emulsify butter and add basil. Arrange shrimp on top of pasta and pour sauce on top. Finish with a little basil and parmesan. Serves 2. |
