Cinnamon Mornings and Chocolate Dreams

Ingredients:
Wet:
1/4 cup vegetable oil
1 cup milk
1 tsp vanilla extract
2 eggs
1-1/2 cups raisin bran cereal

Fruit:
1-1/2 cups chopped apples (leave peels on)

Dry:
2-1/4 cups flour
3/4 cup sugar
2-1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp soda

Instructions:
1. Mix wet ingredients well, adding the cereal last. Let stand 10 min.
2. Chop the cored apples
3. Mix dry ingredients. In altitudes above 3,000 feet, add an extra tablespoon of flour.
4. Combine wet, fruit, and dry ingredients. Mix just until well moistened.
5. Spoon into prepared cupcake trays with paper liners.
6. Optional -- sprinkle each with cinnamon sugar
7. Bake 350 degrees for 10-12 min.

Hint: bake while guest dine on main breakfast course and serve warm as breakfast dessert. Aroma is Great!
