Ingredients: 3/4 cup milk 1/2 cup cooking oil 1/3 cup sugar 1 egg 3 tsp baking powder 1 tsp salt 2 cups all purpose flour 1 tbs. grated lemon peel 1/2 cup chopped fresh or frozen cranberries 3/4 cup fresh or frozen blackberries 1/2 cup chopped hazelnuts Instructions: Preheat oven to 400 Combine first eight ingredients and mix well. Gently fold in berries and nuts and place batter in non-stick (or spray with non-stick spray) muffin cups. Bake approximately 20 minutes. Yield 1 dozen, freezes well. |
