Ingredients: ½ cup unsalted, sweet butter 1 (8 ounce) container plain yogurt 1 cup sugar ¼ cup chopped pecans 2 large eggs 1 teaspoon grated orange rind 2 cups all-purpose flour ½ cup orange juice 1 teaspoon baking soda 1 tablespoon sugar Instructions: Preheat oven to 375 degrees. Beat butter at medium speed until creamy; gradually add the sugar, beating well. Add eggs, one at a time beating until blended. Combine flour and baking soda, add to butter mixture alternating with yogurt, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Stir in pecans and orange rind. Fill greased muffin pans or paper baking cups about ¾ full. Mix 1 tablespoon of sugar with the orange juice. Spoon on top of each muffin. Bake 18 to 20 minutes.
