Ingredients: 1/2 cup of water 1 onions, diced 3-4 cloves garlic, diced Thyme 1 bunched 1 red peppers 1/4 cup diced ginger 5 cups pumpkin (about 2 lbs.) diced medium pieces 3 ears fresh corn, cut in 1/2-inch slices 1 1/2 lbs fresh whole okra 1 1/2 tsp sea salt to taste 2 TBS. raw olive oil to taste Instructions: Sauté 1/2 cup of water add peppers, onions, garlic and thyme in the water for about 7-11 minutes or until onion gets translucent. Add the pumpkin for 11-16 minutes until soft. Add the corn and okra another 11-16 minutes (the okra should be a bright green after this). cover and simmer for 5-10 minutes or until the okra is tender. When ready to serve, add olive oil. Serves: 6-8 |
