Ingredients: Feeds about 4 polite people or 2 ravenous beer drinkers. 4-5 Ripe Aurora Park Cottages Black Mission Figs 1 c. Reasonably good port - Vincent Arroyo is best A hunk of gorgonzola 16 – 20 plus some to snack on – sliced proscuitto or Serrano ham - 1" by 3" Instructions: Snip stems from figs. Cut figs into quarters lengthwise. Put figs into a pot with the port and simmer. Simmer for about 15 minutes. Remove figs from pan. Slowly reduce port/fig conserve (like that word?) to about 1/3. Cut the cheese into bits about ½ the size of the tip of your little finger, unless you are Bill Russell and make it ½ of that. Put the cheese on the fig, put the fig on the end of one slice of ham and roll them little goodies up. Be sure to taste the ham before you start to make sure it is OK. Sometimes it takes 3-4 slices to make this determination. Arrange the fig rollups on a serving plate and drizzle with the remainder of the port and get outta the way. They will disappear faster than Marion Jones at a steroids hearing. Notes: We make fig preserves from the fresh figs and love to give them to our guest. You don't have to wait until fig season. |
