Ingredients: 6 or 7 cups segmented oranges 6 or 7 cups of Jicama strips Squeeze of lime 1/2 cup chopped fresh cilantro Curly lettuce leaves Instructions: You need one big or two medium jicamas, enough for 6 or 7 cups of slim jicama strips. to achieve these nice jucama strips, slice your peeled jicama in about 1/2 inch big slices, cut the slices in 1/4 inch strips, then cut them about 2 inches long, squeeze a little lime over these crisp strips. Peel the necessary oranges and cut in segments taking off the membrane. Mix with the jicama. Sprinkle the chopped fresh cilantro and gently mix. Serve on a leaf of curly lettuce. Notes: Very important that you peel the jicama before cutting. Also, you may add a pich of salt before mixing. |
