Cinnamon Mornings and Chocolate Dreams

Yield: 6 servings 

Ingredients:
6 Fish fillets
4 Tablespoons butter (1/2 stick)
2 Onions, sliced
Salt
Pepper
1/2 cup white wine
1 bundle of Lemon Grass
Lemon wedges (to garnish)
Fresh parsley chopped very fine (for garnish)

Instructions:
In your Pyrex or oven dish, spread half of the lemon grass. You are going to open the bundle and spread out these long pieces of grass to cover the bottom of the dish. Place fish fillets on top,salt and pepper, then dot with plenty of butter,add the sliced onions to almost cover. Pour in just enough wine to almost cover the fish. Now, put the rest of the lemon grass on top, covering all the fillets with the lemon grass. Completely cover the pan with foil and seal the edges. Bake on a moderate oven,preheated. Do not cook for more than 8 to 10 minutes, depending on the thickness of the fillets. For serving, spoon the buttery juice over the fillets,sprinkle with your bright green fresh chopped parsley and decorate with a wedge of lemon.

Notes:
I may have to explain what lemon grass is. It is a grass and it comes about 25 to 30 inches long, so therefore, when you buy it, its all in a bundle, folded up into a 5 to 6 inch bundle. It does impart a very special flavor especially to fish. You may fin
