Cook Time: 45 minPrep Time: 25 min
Yield: 8 servings

Ingredients:
2 Eggs beaten
1 1/2 cupss sugar
3 teaspoons flour
3/4 cup melted butter (or margarine)
1/2 teaspoon salt
3/4 cup hot milk
1 teaspoon vanilla
1 unbaked pie crust

Instructions:
Preheat oven to 250*. In a bowl add butter, sugar, flour and salt, now add eggs one at a time, beating well after each addition. Add the hot milk. Beat only until all is mixed and smooth. Pour all into the unbaked pie crust.
Bake in oven for 40 to 45 minutes. To taste for doneness insert knife in center of pie; if it comes out clean it is done. A slow oven makes the best pie.

Notes:
For desert is the famous southern chess pie. When properly baked, a delicate, delicious sweet crusting forms atop the pie.The following is a real chess pie recipe, handed down from many generations, and comes from Alabama.
