Ingredients:
For Salmon Prep:
1/2 Side Salmon Fillet (approx. 2.5 lbs.)
1 once Cognac
1/2 cup Salt
5/8 cup Sugar
1 T cracked Black Pepper
1.5 T ground Coriander seeds
Large bunch of Dill chopped (stems & leaves)

For Sandwich Prep:
Ciabatta-style rolls sliced
Tomato chutney (or sliced tomato & cucumber)
Goat Cheese or Cream Cheese
Fresh chopped chives
Fresh chopped dill
Olive oil




Instructions:
Salmon:
Place salmon skin side down on a piece of plastic
wrap. Check for bones. Drizzle cognac over
flesh.
Combine salt, sugar, cracked black pepper and
ground coriander seeds in a bowl, and spread
mixture evenly over fillet. Coat the entire
fillet with fresh chopped dill. Wrap the plastic
wrap tightly around the salmon, weight with a
brick, and refrigerate for 48 hours.
Unwrap and rinse with cold water, and thinly slice
on the diagonal. (Note: the following can be used
in place of coriander - fennel seeds, juniper
berries, tarragon, toasted caraway seeds, cumin or
cinnamon.

For Sandwiches:
On Ciabatta sliced roll, spread goat cheese or
cream cheese, add sliced salmon, tomato chutney
(or sliced tomato & cucumber), chopped chives,
dill and a dash of olive oil.
