Ingredients: 1 loaf sweet french bread sliced thick (1") 4 beaten eggs 1 cup half and half 1 tsp vanilla 1 8 oz pkg softened cream cheese 1 1/2 cups chopped pecans 2 Tbsp fruit jam Instructions: Mix softened cream cheese, pecans, and jam together. You can use any other fruit or flavored preserves. Cut French bread into 1 1/2" slices. (Toscano Sweet French has a good flavor and slices well, you don't want a hard crust.) Slice a pocket into each slice again for filling. Stuff with cream cheese mixture. Dip in egg, half and half, and vanilla. Brown in a hot skillet. Note: For fat free: Use non-fat cream cheese, sugarless jam or fresh fruit, egg scamblers and non fat milk. You can use soy milk rather than eggs and milk for vegan diets and stuff with jam only or soy cheese. Fruit Syrup: One package frozen strawberries or any fruit. Put in pan with 1/4 cup of water and 1/4 cup sugar. Bring to a boil. Mix 2 Tbsp corn starch with 1/4 cup of water and pour into hot fruit, bring to a boil until thickened. You can use any fresh fruit or frozen fruit. Strawberries and soy cheese for stuffing and Strawberry syrup is a favorite of our vegan guests. |
